CELLAR NOTES
Perfect grapes arrived at the winery and were hand sorted before being destemmed to small 1.5t fermenters. The grapes were then cooled for pre-ferment maceration. Fermentation was 100% wild and went to dryness. Post fermentation maceration was for 8 days when tannin extraction was achieved. The wine was pressed to barrel for maturation with 25% of barrels being new French oak. ML was completed is spring and was natural. The wine was racked to tank when oak tannin was integrated. The wine was then processed to bottle.
TASTING NOTES
Ripe flavours of plum and spice are apparent with complex forest floor aromas and subtle smokey oak. The palate is rich with great texture, balance and concentration.
