2009 Marble Point Sauvignon BlancWINE ANALYSISHarvest Date: 5th April 2009 CELLAR NOTESGrapes in perfect condition were harvested for ripe flavours in the tropical spectrum, which also gives good concentration. SO2 was used at pressing to retain specific fruit characteristics. The juice was then fined and cold settled then racked, warmed and inoculated with specific cultured yeast. Fermentation was cool and long and SO2 was added when the wine was sugar dry. The wine then spent a brief time on lees. Then it was racked, fined, filtered and bottled. TASTING NOTES |
