pH: 2.87
Residual Sugar: -80g/l

CELLAR NOTES

The aim for this wine was to make a low alcohol style, for the mother in law. The wine was pressed and fined then tasted the next day and then refined for purity so that there was no fining required later, and this was the case. The juice was inoculated and fermented in tank and when balanced was achieved the wine was cooled to 6 degree celcius then SO2 was used and racked soon after.

TASTING NOTES

This is a low alcohol style of wine showing sweet limes and lemons with an intense floral honeysuckle aroma and classic Riesling spice. The palate is fresh and juicy with natural sugars and acid giving an impeccably balanced wine with the phenolic structure leaving your mouth refreshed. Please serve chilled.
