Oak: 100% French Oak Barriques, 33% new
Alcohol: 13.5%

CELLAR NOTES

The grapes arrived at the winery in perfect condition.  They were processed to tank and left to settle with no fining and a small amount of S02. The next day the tank was racked to barrel with about 10% solids for fermentation, which was wild. The wine was then left to mature over the winter without the presence of S02. In spring when the first signs of malo-lactic appeared the wine was sulphured and further maturing was allowed for the intergration of the new oak component. When this was achieved the wine was racked to tank, stabilised, filtered and bottled. 
 
TASTING NOTES

This is a complex wine showing lots of almond and hazelnut   with an intence citrus streak. The palate is very well balanced with great oak intergration and a core of mineral like acidity giving focus. There is also some beautiful structure in this wine which will allow the wine to be cellared.
