2009 Sauvignon Blanc

Grapes in perfect condition were harvested for ripe flavours in the tropical spectrum, which also gives good concentration. SO2 was used at pressing to retain specific fruit characteristics. The juice was then fined and cold settled then racked, warmed and inoculated with specific cultured yeast.
